Falafel Pita with Lemon-Tahini Dressing

A Super Simple Weeknight Meal

Our twist on Taco Tuesday! We have a super simple lemon-tahini dressing that we love, and tastes amazing on a warm mediterranean pita.

Ingredients

Prep time: 15 minutes

Cooking time: 30 min (of constant stirring)

Lemon-Tahini Dressing

  • 1/4c lemon juice

  • 2/3c tahini

  • 2/3c water + additional to get desired consistency

  • 2 cloves garlic

  • 1 tbs chopped parsley

  • 1 tsp cumin

  • 1/2 tsp coriander poweder

Filling: Feel free to use whatever you have available, below is what we used

  • Pita bread

  • Falafel

  • cooked zucchini

  • pickled turnips, carrots, onion

  • diced cucumber

  • chopped spring mix

  • diced tomato

Lemon-Tahini Dressing

  1. Add all ingredients and blend with an immersion blender

  2. Using additional water, thin out to desired consistency. We used the full 2/3c, but like it a bit on the thicker side.

Toast pita and fill with desired ingredients!
