Overnight French Toast Casserole
Easy like Sunday Morning
This is one of our favorite things to make for breakfast! It’s super easy, and usually uses ingredients you already have on hand. We’ve made this recipe a few times now and have fought the too soggy - too dry - not enough flavor battle for you. We also have a few tips on prepping strawberries, and making whipped cream, because everything should be fresh! Follow the recipe below for the perfect overnight french toast.
Ingredients
Prep time: 20 minutes + overnight
Cooking time: 40 min at 350F
Yield: 6x9 inch dish, serving 4-6 people (or in our case 1-2….)
French Toast
1 loaf french bread (400g)
4 eggs
1/2c milk
1/2 c half and half
1 tsp vanilla
1/2 tsp cinnamon
1 1/2 tbs sugar
Topping
1/4c brown sugar
1/8c all purpose flour
1/2 tsp cinnamon
1.5 tbs butter
Strawberries
1/2c strawberries cut no bigger than quarters
1 tbs sugar
1 pinch salt
Whipped Cream
1c heavy whipping cream
3 tbs powdered sugar
1 tsp vanilla
Preparation
Cut bread into 1/4” cubes. I would recommend cutting them a bit smaller than you might think you need. If the cubes are too large they will not soak up the egg mixture correctly and it will not bind well when cooking.
Place cut bread into a buttered baking dish
In a mixing bowl combine milk, half and half, vanilla, cinnamon, and sugar - whisk until combined
Pour entire mixture over your bread
Cover and refrigerate overnight
When you’re ready to bake remove from the fridge, set oven to 350F, and bring your bread to room temperature.
While it’s coming to room temperature, prepare the topping.
Cube butter and place on top of bread.
Combine brown sugar, flour, and cinnamon. Cover the top of your bread with this mixture
Bake for 40 minutes
Preparing the toppings
1. While your french toast is baking, cut strawberries, dust with the sugar, mix and let sit. This will bring out the juice in the strawberries.
2. At this time you’ll want to chill your mixing bowl for the whipped cream. A chilled bowl will help your whipped cream come together and stabilize.
3. Once your french toast comes out of the oven and is cooling, finish up your strawberries, and make your whipped cream.
4. The strawberries should be nice and juicy now, and just require some mashing. I use a fork and just mash to the desired consistency.
5. For the whipped cream, you can add the heavy whipping cream, powdered sugar, and vanilla to a mixing bowl. Turn it on low until everything is combined and slowly increase the speed until you have whipped cream. You want it to hold a peak, but whipping for too long will create butter and you don’t want that!
6. Now you’re toppings are ready, and your french toast should be cool enough to enjoy!
