Cinnamon Coffee Cake

We love to make these whenever we have guests in town. Everyone loves this cake, it’s easy to make, and can be enjoyed any time of day. It’s great with coffee in the morning, or makes a perfect afternoon snack.

We made baby bundt cakes this time, but you can also make a full sized bundt, just double the recipe. The glaze is optional, I actually prefer it plain!

Prep time: 20 minutes

Cooking time: 20-22 minutes

Yield: 8 baby bundts

Ingredients

  • 1/2c butter

  • 1 1/4c granulated sugar

  • 2 eggs

  • 1/2 tbs + 1/2 tsp vanilla extract

  • 1 1/2 c flour

  • 1/2 tbs baking soda

  • 1/2 tbs salt

  • 1c sour cream

  • 1/2 tbs cinnamon

  • 1c powdered sugar

  • 2 tbs milk

Making the cakes

Bring a pot of water to a boil and heavily salt

  1. Preheat your oven to 350F

  2. Combine the dry ingredients (flour, baking soda, salt) in a bowl and set aside

  3. In a mixing bowl cream your butter and 1c of the sugar. Mix on medium speed for 2-3 minutes until fluffy and well incorporated.

  4. Add eggs 1 at a time, beating for about a minute after each addition then add 1/2 tbs vanilla

  5. Add the dry ingredients and sour cream, half at a time, alternating between each, starting with the dry ingredients. You will have 4 additions total, mix just to incorporate after each addition

  6. In a separate bowl, mix the remaining 1/4c granulated sugar with the 1/2 tbs cinnamon.

  7. Spray your cakepan well with a non-stick spray. Add a small amount of batter to cover the bottom, sprinkle on the cinnamon sugar mixture, and add more batter to cover. You can do 2 or 3 layers of batter and cinnamon with the final layer being a topping of cinnamon. Fill no more than 2/3 full and I would rather it be a little lower than overflowing, it makes for a prettier cake.

  8. Bake for 20-22 mins, or until a toothpick comes out clean. Let cool, remove from baking tray and place on a wire rack to finish cooling.

Making the Glaze

  1. Mix the powdered sugar, milk, and 1/2 tsp of vanilla in a small bowl until it comes together. It will look like there is not enough liquid, but give it some time to absorb, if you add more liquid it will be too thin.

  2. Drizzle over the top of each cake and let dry (about 10 mins)

  3. Enjoy!
