Chicken in Cream Sauce with Spinach and Sun-dried Tomatoes

Prep time: 15 minutes

Cooking time: 30 minutes

Yield: 4 servings

Ingredients

  • 2 chicken breast halves

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 tsp oregano

  • 3 tbs oil

  • 2 tbs butter

  • 1/2 medium white onion (diced finely)

  • 4 cloves garlic

  • 3/4c chicken broth

  • 3/4c heavy cream

  • 1/3c grated parmesan cheese

  • 2 tbs sun-dried tomatoes (cut into 1/4” pieces) + 1 1/2 tsp of the oil from the jar

  • 2c spinach loosely packed & roughly chopped

Cooking the Chicken

  1. Cut each piece of chicken into 2 pieces and lightly pound so you have 4 pieces total

  2. Combine the salt, pepper, and oregano - use this mixture to season the chicken on both sides

  3. In a pan over medium-high heat, head the 3 tbs oil and cook the chicken completely. Remove from pan and set aside.

Making the Sauce

  1. Add the 2 tbs butter to the pan that the chicken was in, saute the garlic and onion until the onion is cooked and translucent

  2. Add the sun-dried tomatoes, heavy cream and chicken broth. Let simmer

  3. Add the parmesan cheese and spinach until the spinach wilts

  4. Add the chicken to the sauce, coat and heat throughout
