Chicken in Cream Sauce with Spinach and Sun-dried Tomatoes

Yield: 4 servings
Ingredients
2 chicken breast halves
1/2 tsp salt
1/2 tsp pepper
1 tsp oregano
3 tbs oil
2 tbs butter
1/2 medium white onion (diced finely)
4 cloves garlic
3/4c chicken broth
3/4c heavy cream
1/3c grated parmesan cheese
2 tbs sun-dried tomatoes (cut into 1/4” pieces) + 1 1/2 tsp of the oil from the jar
2c spinach loosely packed & roughly chopped
Cooking the Chicken
Cut each piece of chicken into 2 pieces and lightly pound so you have 4 pieces total
Combine the salt, pepper, and oregano - use this mixture to season the chicken on both sides
In a pan over medium-high heat, head the 3 tbs oil and cook the chicken completely. Remove from pan and set aside.
Making the Sauce
Add the 2 tbs butter to the pan that the chicken was in, saute the garlic and onion until the onion is cooked and translucent
Add the sun-dried tomatoes, heavy cream and chicken broth. Let simmer
Add the parmesan cheese and spinach until the spinach wilts
Add the chicken to the sauce, coat and heat throughout
