Cinnamon Chip Scones
Ingredients
Prep time: 30 minutes
Cooking time: 18 minutes
Yield: 8 scones
2c all purpose flour
1/3c granulated sugar
1 tbs baking powder
1/4 tsp salt
6 tbs butter (cold and cubed)
3/4c heavy whipping cream
1 egg
1 tsp vanilla
2 tsp cinnamon
1c cinnamon chips
Making the Scones
Pre-Heat oven to 400F
Combine flour, sugar, baking powder, salt, and cinnamon in a large mixing bowl
Add the cubed butter and combine with a pastry cutter until you have small pebbles
In a separate bowl whisk together the heavy whipping cream, egg, and vanilla
Add to the flour mixture, add in your cinnamon chips and stir to combine
Dump the dough onto the counter top and work to form a ball. The dough will all stick together, but should still be relatively dry and not stick to your fingers at all. If it is too dry and does not hold, you can add some additional heavy whipping cream, 1 tbs at a time.
Roll into a ball and then flatten to a circle, 7-8 inches in diameter.
Cut into 8 pieces
Place on a baking tray and freeze the dough for 15 mins
Bake for 18 minutes and set on a rack to cool.
Notes
You can add any type of mix-in you want - other types of chips, blueberries, raspberries, etc. Just add 1c of whatever you like, and do not add cinnamon.
If you want to have a lemon or orange flavor add 1 tbs of zest
When baking you can put all 8 on a standard sized cookie sheet - they do not spread much during baking
