Peanut Butter Blossom Cookies

Ingredients

Prep time: 15 minutes

Cooking time: 10 minutes

Yield: 24 cookies

  • 1/2 c creamy peanut butter

  • 1/2 c (1 stick) butter softened to room temperature

  • 1/2 + 1/4c granulated sugar

  • 1/2c brown sugar

  • 1 egg

  • 1 tsp vanilla

  • 1 1/3c all purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 24 chocolate kisses

    Making the Cookies

  1. Pre-Heat oven to 350F

  2. Combine dry ingredients in a large mixing bowl (flour, baking soda, salt)

  3. Cream the peanut butter, butter, 1/2c granulated sugar, and brown sugar in a mixing bowl on medium speed until fluffy

  4. Add the egg and vanilla, beat 1-2 minutes on medium

  5. Add the dry ingredients and mix on low until incorporated

  6. Weigh out 20g of cookie dough, roll into a ball and coat in granulated sugar. This is what you will use that extra 1/4c for.

  7. Place on a baking tray and bake for 10 minutes. Remove from the oven and immediately place a chocolate kiss in the center, pressing down gently. Let cool on the tray for 10 minutes, then remove and place on a wire rack.
