Peanut Butter Blossom Cookies
Ingredients
Prep time: 15 minutes
Cooking time: 10 minutes
Yield: 24 cookies
1/2 c creamy peanut butter
1/2 c (1 stick) butter softened to room temperature
1/2 + 1/4c granulated sugar
1/2c brown sugar
1 egg
1 tsp vanilla
1 1/3c all purpose flour
1 tsp baking soda
1/2 tsp salt
24 chocolate kisses
Making the Cookies
Pre-Heat oven to 350F
Combine dry ingredients in a large mixing bowl (flour, baking soda, salt)
Cream the peanut butter, butter, 1/2c granulated sugar, and brown sugar in a mixing bowl on medium speed until fluffy
Add the egg and vanilla, beat 1-2 minutes on medium
Add the dry ingredients and mix on low until incorporated
Weigh out 20g of cookie dough, roll into a ball and coat in granulated sugar. This is what you will use that extra 1/4c for.
Place on a baking tray and bake for 10 minutes. Remove from the oven and immediately place a chocolate kiss in the center, pressing down gently. Let cool on the tray for 10 minutes, then remove and place on a wire rack.
